I’m real bad at writing out recipes so follow this at your own peril! This one is really simple though so it really shouldn’t be too much hassle.
Right as I tried this it instantly became one of my new favourites for an easy meal. We’re making chicken thighs.
some chicken (duh). I recommend thighs because their high fat content means they dont dry out pretty much ever, which is great for instapot recipes.
1 tbsp brown sugar
1 tsp chili powder
1 tsp thyme
salt+pepper top taste
1 tsp paprika.
2/3 cup chicken stock
In a bowl, mix together the brown sugar, chili powder, thyme, salt, pepper, and paprika.
Generously apply spice mixture to chicken
set the instapot to saute. With a little oil in the pot, brown the chicken for ~4 minutes each side.
Add the chicken stock, scrape the bottom real good, then close the lid on that bad boy.
Pressure cook on high for 20 minutes.
Done! Enjoy some chicken with loads of flavour. Serve with rice and veggies. Or don’t, I’m not your mom.
